Please see the attached Cellulose Ingredient Status in response to the recent media coverage of cellulose product in grated parmesan cheese. The company under investigation did not meet the requirements for grated cheese as required by law. The standards for grated cheese are published by the FDA in 21 CRF 133.146. There is no direct limit on the amount of anti-cake that can be added to cheese. Sweetener Supply’s recommendation for powdered cellulose addition on cheese is 1-2%.
